Vegan Dates Ice-Cream with Coconut Milk Yogurt

Vegan Dates Ice-Cream with Coconut Milk Yogurt

Ingredients Serves 1

5 cup Epigamia Coconut Milk Yogurt (Unsweetened)
200 g Dates (pitted)
100 g Almond flour
Mint leaves and a few dates for garnish (optional)

Directions Prep Time : 15 mins

Step 1 In a bowl, soak the pitted dates in Epigamia Coconut Milk Yogurt overnight (or until the dates become soft enough the blend easily)
Step 2 Blend the mixture with a hand blender or a food processor.
Step 3

While blending, add 100g of almond flour and blend until you reach a creamy consistency.

Step 4 Pour into a loaf tin (lined with parchment paper if possible)

 

Step 5 Freeze for 5 hours.
Step 6 When ready, take out and leave at room temperature for 10 to 20 minutes and it should be nicely scoopable.
Step 7 Top it up with some mint leaves and serve!
