
Vegan Dates Ice-Cream with Coconut Blend

Ingredients Serves 1
5 cup | Epigamia Coconut Blend (Unsweetened) |
200 g | Dates (pitted) |
100 g | Almond flour |
Mint leaves and a few dates to garnish (optional) |
Directions Prep Time : 15 mins
Step 1 | In a bowl, soak the pitted dates in Epigamia Coconut Blend overnight (or until the dates become soft enough to blend easily) |
Step 2 | Blend the mixture with a hand blender or a food processor. |
Step 3 |
While blending, add 100g of almond flour and blend until you reach a creamy consistency. |
Step 4 |
Pour into a loaf tin (lined with parchment paper if possible)

Step 5 | Freeze for 5 hours. |
Step 6 | When ready, take it out and leave it at room temperature for 10 to 20 minutes so that it is nicely scoopable. |
Step 7 | Top it up with some mint leaves and serve! |
