1 cup cooked moong dal (9 g protein, 192 kcal) ½ cup diced tomato 1 cup assorted veggies (carrot, red capsicum, spinach, onion, garlic, ginger) ½ tbsp cumin ½ tbsp turmeric
Salt to taste 5 tbsp epigamia turbo greek yogurt (11.3 g protein) 1 tbsp olive oil 1 cup vegetable broth
Instructions
Step 1 Heat olive oil in a pan and sauté onion, garlic, and ginger until fragrant.
Step 2 Add tomato, spinach, carrot, and capsicum. Cook for 5 minutes.
Step 3 Stir in moong dal, broth, turmeric, cumin, and salt. Simmer for 20 minutes.
Step 4 Blend the mixture until smooth and creamy.
Step 5 Top with a dollop of Turbo Yogurt and serve hot.
